…in bed.

You are at the table with family or a group of friends and your Chinese dinner is about to end. A pile of fortune cookies are laying in wait to be uncovered. Which one do you grab? Which fortune is calling out to you? Some people postulate that it won’t matter which cookie you pick for as long as the specific fortunes are still unknown at that point, your fortune will find you. I just hope for the best one of the bunch. If you are not with your kids, parents or grandparents, you should always add the phrase “in bed” to the end of your fortune when you read it out loud. It really makes the fortunes much better.

The worst I’ve seen, thankfully was not mine. It read “Sunday is a good day to do chores.” I was astounded at how little thought the fortune writer spent on it. It was comical in how lame it was.

The best one, at least for me, is one I still keep on my desk as work. I have had it though five or six jobs and even more offices. Those who know me laugh as THEY believe it does not fit me at all. It reads, “You have an infinite capacity for patience”……in bed.

I’ve made this dish for many different people and at first everyone is reluctant. A cold rice dish that does not have eastern flavors? It works. It really does.

Rice Salad

Ingredients:

  • 3 cups cooked rice
  • 1/4 cup diced pimentos
  • 1 tsp salt
  • 1/4 tsp pepper
  • 1 cup sour cream (may need more)
  • 1/2 cup green onions
  • 4 hard boiled eggs
  • Celery seed to taste

Directions:

Cool rice.

Add all ingredients together and chill for 2 hours.
