Twittering a Lost Bear

In early December of 2013, Lauren Bishop Vranch boarded a train at Kings Cross Station (yes the same from the Harry Potter books) in London and came across a lost stuffed animal. It looked like a bear to her and knowing that some child would be missing their well-loved friend, she knew it was important to reunite the bear with its owner.

She took the bear to the authorities on the train but was told the bear would be deposited at the train’s destination (Scotland). Believing the owner had left it when they departed the train in London, Lauren decided to hold on to the Bear until she returned to London the next day.

What followed was a series of twitter posts with pictures of the bear on the train ride, in cafes and pubs, at a show and even in the hotel. The Internet became captivated with the story and in very short order the owner, a little girl named Phoebe, was found. The animal, actually a lion named Roar, was eventually sent back to her for a joyous reunion.

When you slice open the chicken, ensure you don’t cut all the way through, so you end up with a nice pocket.

A meal fit for Roar!

Spinach Stuffed Chicken Breasts

Prep Time: 25 M | Cook Time: 1 H | Makes: 4 servings

Ingredients:

  • 1/2 cup mayonnaise
  • 1 (10 ounce) package frozen chopped spinach, thawed and drained
  • 1/2 cup crumbled feta cheese
  • 2 cloves garlic, chopped
  • 4 skinless, boneless chicken breasts
  • 4 slices bacon

Directions:

Preheat oven to 375 degrees F (190 degrees C).

In a medium bowl, mix mayonnaise, spinach, feta cheese, and garlic until well blended. Set aside.

Carefully butterfly chicken breasts, making sure not to cut all the way through. Spoon spinach mixture into chicken breasts. Wrap each with a piece of bacon, and secure with a toothpick. Place in shallow baking dish. Cover.

Bake in the preheated oven for 1 hour, or until chicken is no longer pink in the center and the juices run clear. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

    What a lovely story! I don’t think your stuffed chicken would have prompted the same result…no, King’s Cross staff would have gobbled it up in no time, it’s far too delicious to be allowed out on its own!
