I have been remiss. Last year, as part of our gourmet club, we had a great dinner with a Soul Food theme and as I am so focused on eating the great food, I often forget to take pictures. Lucky for me, one of the other participants will take pictures and send them. As that is out of my normal process, I put those pictures aside and there they sat for almost a year.
This delay is unfortunate, because this was such a great dish. When it was time for the salad course and it was announced we were going to have Cornbread Salad, I admit I was skeptical. I shouldn’t have been. It was AWESOME!
Cornbread Salad
The flavors just plain worked and the presentation in a bell pepper was a great way to display the dish.
This is a perfect dish for your summer dining!
Cornbread Salad

Ingredients
2 (8 ounce) packages dry corn bread mix
1 red onion, chopped
1 green bell pepper, chopped
1 tomato, chopped
1 cup grated cheddar cheese
4 cups mayonnaise (start with 2 and add more as needed)
Optional bell peppers
Directions
Prepare cornbread according to the box instructions. Cool, crumble and place in a large bowl.
Mix in red onion, bell pepper, tomato, cheese and mayonnaise. Cover, and refrigerate for at least 3 hours.
Optionally serve inside of bell peppers.
