Minute Steak Salad
This is a great combination of the quick cooking minute steaks (think Steak-Umm), and a fresh salad.
I had a handful of little peppers, so my cutting time was just a bit increased.
Cook the onions and peppers until soft and the onions start to lose their color.
Add the steak and chop it into little pieces.
Stir while cooking.
Add cheese and cook until it melts.
Serve over salad. Awesome!

INGREDIENTS
- 2 tablespoons unsalted butter or canola oil
- 1 cup fresh sliced red and green bell peppers
- 12 ounces leftover cooked steak, shredded (minute steaks work)
- 1/4 teaspoon garlic powder
- Salt and pepper to taste
- 1 cup shredded mozzarella cheese
- 10 ounces mixed salad greens
- Blue cheese crumbles (optional)
DIRECTIONS
1) Heat the butter or oil in a large skillet over medium high heat. Add the peppers, steak and seasonings and cook for about 5 minutes until the peppers are tender.
2) Turn the heat off. Top the hot steak and peppers with cheese and let it melt.
3) Divide the salad greens evenly between two bowls.
4) Divide the hot mixture evenly between the bowls of salad and serve immediately. Optionally add blue cheese crumbles.
This looks so good! I’ve been trying to find recipes that are healthy but still delicious. Looks like it would work well as a taco too!
