Variation on a Theme

Some of the best recipes are variations on a theme. One of my favorite lunch recipes when I was growing up is the Beef Snackins one that I have made for the blog. In that one I use roast beef and chili sauce to fill biscuit cups.

I didn’t have any beef, so I decided to see what I could do with chicken.

A can of chicken, a tube of refrigerated biscuits, some BBQ sauce and a little mexican blend cheese.

You can’t eat just one!

BBQ Chicken Snackins

Prep Time: 4 min | Cook Time: 12 mins | Servings: 3 | Difficulty: Easy

Ingredients:

1 12 ounce can of chicken
3 tbsp BBQ sauce
1 cylinder of flaky biscuits
About 1 cup Shredded cheddar or Mexican cheese blend

Directions:

Preheat oven to temperature on biscuit container directions.

Spray muffin tin with cooking spray. Mix chicken with BBQ sauce and shredded cheese.

Place 1 biscuit in each outside muffin tin. Spread biscuit dough across bottom and up sides of muffin cup, creating a cup. Spoon chicken mixture into each cup.

Bake according to biscuit directions. Serve.
