One way is to push the food up against The Knife Glider and use a slot to cut in.
Nice even cuts and your hand is out of the way.
The other way is to place The Knife Glider on the food and use the face of it as a shield against your knife. I found this to be easier.
It holds all kinds of food.

I used it for jalapeños that I didn’t want to get the hot oils on my hands.

My take: If you spend any time around professional chefs or even prolific home cooks, you will find that everyone has sliced into their fingers multiple times. The Knife Glider is built to keep that from happening to you. It is versatile and easy to store and clean (dishwasher safe).
