There are a hundred billion different cooking sites and blogs out there and it is impossible to follow more than fraction of them. I hope this site is in the fraction that you follow and some of my readers write blogs that are in my fraction.
One of the others that I keep an eye on is Eatocracy, which CNN has adopted as its food blog. They have some good recipes, interviews and other news stories but one of their features I like the best – 5 @ 5. Every week or so, at 5PM, there will be a post where a chef (or sometimes bartender) gives some wisdom with a short list of 5 items. It could be five pasta shapes and how to best use them. It could be five classic southern dishes. It could be five great summer beers. I like it because it varies and is concise. Check it out here.
This could be on a 5 @ 5 list for best uses for turkey cutlets.
So simple.
Fry up the cutlets.
Make a little sauce.
Serve a delicious meal.
Turkey Cutlets with Tarragon
Prep Time:Â 5 mins |Â Cook Time:Â 10 mins |Â Makes:Â 4 servings (serving size: about 5 ounces)
Ingredients:
- 1 (1 1/2-pound) package turkey cutlets
- 2 garlic cloves, cut in half
- 3/4 teaspoon dried tarragon
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- Cooking spray
- 1 tablespoon extravirgin olive oil
- 1/4 cup lemon juice
- 1/4 cup dry white wine
- 2 tablespoons chopped fresh parsley
Directions:
1. Rub both sides of each turkey cutlet with garlic halves. Discard garlic halves.
2. Combine tarragon, salt, and pepper. Set aside.
3. Heat oil in a large nonstick skillet coated with cooking spray over medium-high heat. Add half of cutlets. Sprinkle half of tarragon mixture over cutlets. Cook 3 minutes on each side or until cutlets are done. Transfer cutlets to a serving platter; keep warm. Repeat procedure with remaining cutlets and tarragon mixture.
4. Add lemon juice and white wine to pan. Increase heat to high, and cook 1 minute, stirring constantly. Spoon wine mixture over turkey cutlets. Sprinkle with parsley.
